Vegetable Soup - I use this for lunch or a mid meal snack.

1 Onion, 2 Cloves Garlic chopped and cooked in 1 tbsp of Olive Oil. Add 2 Carrots, 2 Sticks Celery, 1 Red Capsicum all diced, 1/4 head of Cabbage, Green Beans 2 tins diced tomatos, a few cups of water, a low salt vegetable/chicken stock cube, some chilli and paprika. Boil for a few hours until veggies are tender. You can also add Zucchini, Squash etc if you like, try adding some cannellini beans to add some bulk to it. If you dont like it chunky, use a stick blender at the end.

Pizza

1 Pita Bread, spread with pizza sauce or tomato paste, add spinach leaves, mushrooms, sliced roasted capsicum (bell pepper), sliced olives, roasted pumpkin, 25gms light grated cheese, season and bake in a 200c oven till cheese has melted and mushrooms look cooked. This is a huge meal that is tasty can can be changed to your own tastes.

Lunch Wrap

1 Pita Bread or Mountain Bread Wrap, spread Beetroot Dip on the base, add grated carrot and zucchini (courgette), baby spinach leaves, mushrooms, sliced raw capsicum (bell pepper) and season. If you have the points you can add light grated cheese, Chicken, Ham etc.
